Dissecting a Cow – Why we must end Intensive Cattle Farming

The beef farming industry is about meat and money.  In Brazil the industry is controlled by huge conglomerates as it is in Argentina and the USA.  They are directly responsible for large scale deforestation, which is a crime against humanity.

In the UK it is more subtle.  Control is largely by the supermarkets with a small private sector of butchers providing high end traditional and therefore expensive service.  These guys go out of business because they cannot compete  with the supermarkets.

Meat and money made simple

A beef animal is an inefficient agricultural unit.

Step 1

Throw away 50% of the animal tissue.  Mostly incinerated.

Leaving 250 Kg

Value £2000, £8 a Kilo.

Step 2

Take out the prime Fillet cut.  2% of the volume, 20% of the value.  5 Kg at £80 a kilo.

Leaving 245 Kg

Value £1600

Step 3

Take out the other prime cuts: Loin, Rump, Topside and Silverside.  21% of the volume, 38% of the value.

Leaving 192 Kg

Value £750

Step 4

The cheap cuts can now be removed like Brisket.

Leaving 170 Kg

Value £500

Step 5

All that is left is 170 Kg of mince worth £500 or £2.94 a kilo.

When higher cuts cannot be sold they are minced and sold cheaply.
